Christmas Morning Casserole

It’s Christmas morning, there are presents to unwrap, pictures to make, and relatives to see – who has time to cook breakfast? My family has a tradition of eating breakfast casserole each Christmas morning after plowing through presents. With many foods to make for various festivities, my mom often prepares a breakfast casserole on Christmas Eve. So, if you are looking to prolong holiday bliss and cut down on dishes Christmas morning, try one of these Christmas morning casseroles to feel extra merry and bright!

French Toast Casserole

-1 loaf of cinnamon swirl bread cut into cubes
- 6 eggs beaten
-3 cups of milk
-2 teaspoons of vanilla extract
-1/4 cup of powdered sugar

1) Place bread cubes in a three-quart shallow greased baking dish.
2) Mix eggs, milk and vanilla and pour over bread.
3) Cover and refrigerate 1 hour or overnight.
4) Bake at 350 degrees for 50 minutes or until golden brown.
5) Sprinkle with powdered sugar and serve with maple syrup.

Cheesy Ham and Hash Brown Casserole

-1 32 oz. package of frozen hash browns
- 8 oz. of cooked, diced ham
-1 teaspoon of onion powder
-2 cans (10.75 once) cream of potato soup
-1 (16 oz.) container of sour cream
-2 cups of shredded sharp cheddar cheese
-1 ½ cups of grated parmesan cheese

1) Pre-heat oven to 375 degrees and grease a 9X 13 inch baking dish.
2) Mix hash browns, ham, onion powder, cream of potato soup, sour cream and cheddar cheese.
3) Spread evenly in pan and sprinkle with parmesan cheese.
4) Bake for 1 hour until light brown and bubbly.

Sausage and Egg Casserole

-1 lb. of pork sausage
-6 eggs
- 2 cups of milk
-1 teaspoon of salt
-1/2 teaspoon of pepper
-1 teaspoon of ground mustard
- 6 slices of your favorite slice bread cut into ½ inch cubes
- 1 cup of shredded cheddar cheese

1) Brown sausage, drain and set aside.
2) In a large bowl, beat eggs, milk, salt, pepper and mustard together.
3) Stir in bread, cheese and cooked sausage.
4) Cover and refrigerate for 8 hours or overnight.
5) Bake at 350 degrees for 40 minutes or until knife inserted in center comes out clean.
